 Vegetarian Protein Salad

A salad is the best and easiest healthy and tasty go-to snack anyone can make. We are not chefs but here is a great(probably the greatest) recipe of a protein salad you’d love! ENJOY!!!

INGREDIENTS

  • 1 Cup sprouted green gram
  • ¼ cup peanuts(for best results, soak it overnight)
  • Finely chopped green chilli ( add according to your spice craving)
  • ¾ cup chopped cucumber ( peeled and de-seeded)
  • 1 chopped tomato
  • 2 tbsps chopped onions
  • 1 tbsp coriander
  • 1 tbsp salad oil/olive oil
  • Salt according to taste
  • ½ tsp black pepper
  • 1 tsp lemon juice

OPTIONAL INGREDIENTS:

  • ¼ cup fresh paneer cubes
  • 5-6 grated tender spinach leaves
  • 1 tbsp yellow and red capsicum each ( can use green too)
PROCEDURE
  • Pour the green gram, cucumber, tomato, onions, capsicum and paneer cubes into a plate or a bowl.
  • Mix it well and now add the peanuts, chilli, coriander and the spinach leaves and mix again.
  • Add the oil and the lemon juice. Wait for 5 minutes or so and then sprinkle some salt and black pepper.
  • Mix again. Your healthy vegetarian protein salad is ready!!
